I grew up watching my mom cook and bake all the things. I remember vividly growing up in Brasil and coming home from school to a table full of food. I can still smell the cakes and her delicious fish she would cook. My mom has always loved being in the kitchen cooking and baking. And I get why, food always brings people together. It gathers people.

I wish I was half the cook my mom is. But as I have aged, I do love being in the kitchen. With the move and having more space, we have had family over for Thanksgiving and Easter. And as exhausting as it is to host, I love it. I love setting out the serving plates and dishes and creating a gorgeous spread. I still have a lot to learn, though ?.

I think a lot about how my mom got her love of food and cooking/ baking from her mother and how memories stick with us, how the love for something can be passed down to our kids. I want my kids to have the same kind of memories I did (I used to lick the batter of every cake my mom made?). I want my kids to remember having fun in the kitchen, cooking with me, and I want them to remember the smell of food and cakes like I grew up.

I want them to remember the kitchen table set up with good food and a pretty setup. But not just for the holidays. The just because moments, the moments where we intentionally slow down and have dinner together.

I’ve long admired MacKenzie-Childs and their gorgeous serving plates, decor, and kitchen items. Each piece, I feel like telling a story and a moment in time. Carrot Cake Recipe

Preheat oven to 375, you’ll bake for 35 minutes.
4 Large Carrots
3 Eggs
2 Cups of Sugar
1 Cup of Oil
2 Cups of FLour
1 Tablespoon Baking Powder
Dash of Salt

Blend carrots, eggs, sugar, and oil in a blender until nice and smooth. Mix your dry ingredients in a bowl first. Once your egg mixture is blended combine the two in your bowl and mix well.

Chocolate Icing:
3 TBLS Sugar
3 TBLS Cocoa powder
3 TBLS Milk
1 TBLS butter

Add all the above in a small saucepan and mix until the mixture starts to bubble (do not let it boil). Slowly add icing over cake.

Brasilian Chocolate Cake Recipe

I’ve actually shared this homemade chocolate cake before on IG. This is one of my mom’s recipes, and it’s SO good. the cake is very soft and fluffy.

Preheat oven to 375, you’ll bake for 35 minutes.
3 eggs
1 cup of sugar
1 cup cocoa powder (I use the Nesquik brand)
Pinch of salt (around 1/4 TSP)
1 TBS of Baking Powder
2 Cups Flour
1 Cup Oil
1 Cup Boiling water.

You are going to blend everything EXCEPT the boiling water first. Once your mixture is blended, add the cup of boiling water and blend until smooth and soft.

Chocolate Icing:
3 TBLS Sugar
3 TBLS Cocoa powder
3 TBLS Milk
1 TBLS butter

Add all the above in a small saucepan and mix until the mixture starts to bubble (do not let it boil). Slowly add icing over the cake.

No-Knead Bread Recipe

this is actually a recipe I found on IG and now I’ve made it so many times now. It’s SO easy and good.

3 cups all-purpose flour
1 TSP salt
½ TSP active dry yeast
1.75 Cups warm water

Combine the dry ingredients and then add your warm water in a bowl. Mix everything together until you have a sticky dough. Cover it and let is rise overnight (5-12hrs). Remember to store away from drafts (microwave is best). Once the dough has risen, flour the country top and shape to add to pan. No kneading is necessary, just make sure the dough is no longer sticky and nice and soft. No need to preheat the oven- bake 450 degrees covered for 30 minutes, then uncover and bake for another 30 minutes until golden.
