If you are on social media at all, chances are you have seen the viral videos of In-N-Outs flying Dutchman burgers all over TikTok and Instagram. It is all the rave and worth all the hype especially if you are on a low-carb diet. Skip the buns and replace them with fried onion patties. The onion patties are first sauteed on a pan or grill pan and then set aside until the beef patties are cooked. Once the beef patties are cooked, you then assemble the burger with double patties, cheese slices, and use the fried onion patties in place of buns. The burgers are then served with a homemade In-N-Out sauce that I made healthier using Greek yogurt instead of mayonnaise.

ingredients you will need

  • Ground beef burger patties: I always use the leanest ground beef I can get my hands on. You may also use other types of meat like ground chicken. The whole idea is to use ground beef though.
  • Kosher salt and pepper, to taste
  • Olive oil: or you may also use avocado oil
  • Cheese slices of choice, divided- I love cheddar, American, or Provolone
  • Yellow onion, cut into 4 x 1/2 inch thick rounds: find large sizes for this to work.
  • Greek yogurt: I use this in place of Mayonnaise. You can use lite mayonnaise or sour cream.
  • Relish or chopped pickles
  • Sugar or honey or agave
  • White wine vinegar: or lemon
  • Ketchup: can’t skip this.
  • Yellow mustard: or honey mustard

How to make Flying Dutchman

Start by making the sauce. In a small bowl, whisk all the sauce ingredients, then refrigerate until ready to use.

Sprinkle your patties with salt and pepper on both sides and set aside to reach the room temp.

Meanwhile, preheat a large heavy-bottom skillet over medium heat. Drizzle with 1 tbsp of oil and cook the onion rounds until golden brown on both sides. Add 2 of the cheese slices on 2 onion rounds and set aside on a plate. Cover to keep warm and help the cheese melt.

To the same preheated skillet, add the patties and cook until it start to get golden brown, then flip them and add the remaining cheese slices of 2 of your cooked patties. Continue to cook for 1 more minute, or just until the cheese starts to melt.

Quickly assemble the burgers on a clean plate; Starting with the grilled onion without cheese as your base, stack the rest as follows: patty without cheese, the second patty with cheese, then finish off with the onion with cheese.

Serve with a drizzle of the yogurt sauce and enjoy while warm.

  • 1 lb 93% lean ground beef burger patties 7% fat
  • Kosher salt and pepper to taste
  • 1 tbsp olive oil
  • 4 cheese slices of choice divided
  • 1 large yellow onion cut into 4 x 1/2 inch thick rounds

For IN-N-OUT sauce:

  • 1/3 cup Greek yogurt or lite mayo
  • 3 tbsp relish or chopped pickles
  • 1 tbsp sugar or honey or agave
  • 1 tbsp white wine vinegar

  • 1 tsp yellow mustard

Notes

  • Do use large onions
  • You can use lean ground chicken or ground turkey.
  • Use any cheese of your choice like American, cheddar, or provolone.
  • Work with care. It is a bit messy and hard to handle when making. It is expected so just work slowly when assembling the burger.

    Double check your assembly instructions and also include when and where to put the sauce?

      Hi John, that was in step 6? How can I make it better? Also, the sauce can be served in between the patties or you can spoon it on the burger or dip the burger in sauce.
