The Totally Chocolate Chocolate Chip Cookies are absolutely divine and so easy to make. Mine did not flatten out as expected, so I gently pressed them down towards the fifteenth minute. I'd appreciate any tips on how to get them to flatten out for my next batch.

Nigella's Totally Chocolate Chocolate Chip Cookies (from NIGELLA EXPRESS) are chocolate cookies studded with dark (bittewrsweet) chocolate chips. The cookies should be crisp on the outside but soft in the centre.

The cookies are not supposed to flatten out completely during baking, but remain slightly mounded. This gives the cookies their soft centres. In the method it says to put mounds of the cookie dough on the baking sheet and not to flatten the mounds (step 5). If the dough is chilled before baking then the cookies will be slightly more rounded, so if you want slightly flatter cookies then bake them as soon as you have mixed up the dough. But we would not recommend flattening the cookies completely as this will affect the texture.
